Greetings.. I work a job that requires me to be in a car for 12 hours (0830 - 2030).. I can get out but the day is largely unplanned. I carry a large lunch box/cooler with me and I'm looking for ideas as to what to toss in there for essentially 2 full meals. Of course I can stop and grab stuff on the go, but I'm looking for some foods/meals that are fairly loaded to aid my caloric needs (4500-5000 / day). Normally, I have 1 PBJ, 2 roast beast/cheese sandwiches, 1/2 gal milk, and some fruits.. Any ideas?

Anything. I don't see how you are limited at all?
I'm usually out of the house about 10-12 hours a day in between travelling, work & gym. Here's what I try and carry to make sure I can keep eating:
about 300g of meat (steak, chicken breast, ground beef whatever)
3-4 hard-boiled eggs
Half a cup of almonds/macadamias
A carrot and some cheese (I swear this is a weird but great combo)
1-2 baggies of protein powder (just mix it with water in a shaker)
1 protein bar (These are a bit of a luxury, if you don't want to cough up the cash you can take cans of tuna or make some beef jerky)
2 pieces of fruit (apple and an orange generally).
That seems to keep me going pretty well most of the time. I'd probably be well served by making myself eat a few more veggies but I know half the time I'm not even gunna eat them :P.
